Garlic Butter Shrimp with Broccoli Rice

The garlic and butter create a classic sauce that makes the shrimp taste incredible, and pairing it with finely chopped broccoli gives you a nice nutritional boost.
Most people love this dish because it is naturally low carb and feels much lighter than a heavy pasta dinner. If you want to save even more time, you can prep the broccoli ahead of time by pulsing it in a food processor so it is ready to toss into the pan when you get home.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 4 cups broccoli florets, pulsed into rice texture
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon red pepper flakes
- Salt and black pepper to taste
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley

Pat the shrimp dry with paper towels and season them lightly with salt and pepper.

Heat the olive oil in a large skillet over medium high heat.

Add the shrimp to the pan and cook for about 2 minutes per side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside on a plate.

In the same skillet, melt the butter and add the minced garlic and red pepper flakes. Cook for about 1 minute until the garlic is fragrant.

Add the processed broccoli rice to the pan. Sautรฉ for 3 to 5 minutes until it is tender but still has a slight crunch.

Return the cooked shrimp to the skillet and toss everything together to coat in the garlic butter.

Store any leftovers in an airtight container in the fridge for up to two days. This dish is best served immediately, but it reheats well in a pan over medium heat. You can add a sprinkle of parmesan cheese on top if you want an extra savory kick.
