There is nothing quite like a bubbling pot of homemade stew to warm you up on a chilly evening. This stovetop version is a favorite in my house because the chicken stays so juicy and the vegetables soak up all the delicious flavors of the broth.

My best tip for this recipe is to make sure you cut your potato chunks into roughly the same size so they all finish cooking at the same time. It makes for such a satisfying texture in every spoonful.

Ingredients

  • 2 pounds boneless skinless chicken thighs, cut into bite sized pieces
  • 3 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound baby potatoes, quartered
  • 3 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 teaspoon dried thyme
  • 1/2 cup all purpose flour
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped
