I love how the peppers and onions add a nice sweetness that balances the savory spices. If you enjoy a bit of extra heat, feel free to add a pinch of red pepper flakes or a chopped fresh chili to the pan while the aromatics are cooking.
Ingredients
- 1 pound chicken breast, cut into bite sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon curry powder
- 1 teaspoon ground ginger
- 1 can (13.5 ounces) full fat coconut milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh cilantro for garnish
