Roasted vegetables are a staple in my house because they go with just about any main course. When I was waiting for my kitchen renovation to finish, I learned that the air fryer setting on a countertop oven is actually the secret to getting veggies that are tender on the inside and nicely browned on the outside.

My best tip for success is to make sure you do not crowd the pan. Giving the vegetables a little breathing room is what allows the hot air to circulate so they get crispy instead of soggy. It is such a simple way to get a healthy side dish on the table in record time.

Ingredients

  • 1 pound broccoli florets
  • 2 large carrots, peeled and sliced into rounds
  • 1 red bell pepper, chopped into bite sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice

    Preheat your air fryer oven to 400 degrees Fahrenheit.

    In a large mixing bowl, toss the broccoli, carrots, and bell pepper with the olive oil, garlic powder, salt, and pepper until everything is evenly coated.

    Spread the vegetables out in a single layer on the air fryer tray or baking pan, making sure they are not overlapping too much.

    Slide the tray into the oven and roast for 12 to 15 minutes, shaking the tray halfway through to ensure even cooking.

    Check that the vegetables are tender and charred to your liking, then remove from the oven and drizzle with fresh lemon juice before serving.

These vegetables taste best served warm right out of the oven. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat them in the air fryer for a few minutes to bring back that crunch.
