When zucchini season hits its peak, I always start looking for ways to use it up. These muffins are a family favorite because they are so fudgy and moist that you cannot even tell there are vegetables hidden inside.

My biggest tip for this recipe is to make sure you squeeze as much water as possible out of the shredded zucchini before adding it to the batter. This keeps the muffins from becoming soggy and ensures a perfect texture every single time.

Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup melted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely shredded zucchini
  • 1/2 cup chocolate chips

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a muffin tin with paper liners.

  2. 2

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.

  3. 3

In a separate large bowl, mix the melted butter, sugars, egg, and vanilla until smooth.

  4. 4

Stir the shredded zucchini into the wet ingredients.

  5. 5

Gently fold the dry ingredients into the wet mixture until just combined, then fold in the chocolate chips.

  6. 6

Divide the batter evenly among the muffin cups.

  7. 7

Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.

  8. 8

Let the muffins cool in the pan for 5 minutes before moving them to a wire rack.

๐Ÿ’ก Tips

Store these muffins in an airtight container at room temperature for up to three days. They also freeze very well if you want to keep some for school lunch boxes later in the month.
