If you are looking for a breakfast treat that is both wholesome and delicious, these almond flour muffins are a perfect choice. They have a lovely golden crust and a soft center that makes it hard to believe they are made without any traditional wheat flour.

Because almond flour is quite different from regular flour, I spent a lot of time getting the balance of moisture and fat just right. These muffins rely on simple pantry ingredients and are naturally gluten free. For the best texture, make sure to let them cool for a few minutes before you try to remove them from the pan.

Ingredients

  • 2 cups blanched almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/3 cup honey or maple syrup
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup fresh or frozen blueberries

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a standard muffin tin with paper liners.

  2. 2

In a large bowl, whisk together the almond flour, baking soda, and salt until there are no clumps.

  3. 3

In a separate smaller bowl, whisk the eggs, honey or maple syrup, melted oil, vanilla extract, and lemon juice.

  4. 4

Pour the wet ingredients into the dry ingredients and stir until well combined.

  5. 5

Gently fold in the blueberries with a spatula, being careful not to break them too much.

  6. 6

Divide the batter evenly into the prepared muffin liners.

  7. 7

Bake for 20 to 25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

  8. 8

Remove the pan from the oven and let the muffins cool completely before serving.

๐Ÿ’ก Tips

Store your muffins in an airtight container in the refrigerator for up to four days. If you want to keep them longer, they freeze beautifully for up to three months. Simply thaw them on the counter or warm them up in the oven for a few minutes before eating.
