There is nothing quite like starting your day with a warm and filling breakfast burrito. I used to visit the local shop for mine, but I quickly realized that making them at home is actually much better because you can control exactly what goes inside.

My best advice is to make a big batch on Sunday afternoon so you have breakfast ready to go for the entire week. Just wrap them tightly in foil and keep them in the freezer until you are ready to heat one up.

Ingredients

  • 8 large flour tortillas
  • 8 large eggs
  • 1 pound breakfast sausage or chopped bacon
  • 2 cups shredded cheddar cheese
  • 1 cup frozen hash browns, cooked and crispy
  • 1/2 cup diced bell peppers
  • Salt and black pepper to taste
  • Cooking spray or butter for the pan

Instructions

    Cook your sausage or bacon in a large skillet over medium heat until browned, then remove it from the pan.

    Whisk the eggs in a bowl with a little salt and pepper.

    Add the eggs to the same skillet and scramble them gently until they are just set.

    Lay out your flour tortillas and place a portion of the eggs, meat, hash browns, and peppers in the center of each.

    Sprinkle a generous amount of shredded cheese over the filling.

    Fold in the sides of the tortilla and roll it up tightly to secure the filling inside.

    Wrap each burrito individually in aluminum foil for storage.

    To serve, heat the unwrapped burrito in the microwave for about one to two minutes or until heated through.

💡 Tips

Store these in a freezer bag for up to one month. You can also add some salsa or hot sauce before wrapping if you enjoy a little extra kick in the morning.
