If you love a balance of smoky heat and natural sweetness, these honey chipotle chicken thighs are going to become a new favorite in your kitchen. The chipotle peppers give the chicken a nice kick, while the honey creates a beautiful sticky glaze that caramelizes perfectly in the pan.

I love serving this with a quick peach slaw because the cool and juicy fruit cuts right through the spicy glaze. It is such a bright and colorful meal that feels special enough for guests but is simple enough to put together on a busy weeknight.

Ingredients

  • 1.5 pounds boneless skinless chicken thighs
  • 2 tablespoons honey
  • 2 chipotle peppers in adobo sauce, finely minced
  • 1 tablespoon adobo sauce from the can
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 2 fresh peaches, thinly sliced
  • 2 cups shredded cabbage
  • 1 tablespoon lime juice
  • 1 tablespoon chopped fresh cilantro

Instructions

  1. 1

In a small bowl, whisk together the honey, minced chipotle peppers, adobo sauce, garlic, and salt to create your glaze.

  2. 2

Heat the olive oil in a large skillet over medium heat.

  3. 3

Add the chicken thighs to the skillet and cook for about 6 to 8 minutes on each side until they are golden brown and cooked through.

  4. 4

Pour the honey chipotle sauce over the chicken in the pan and let it simmer for 2 to 3 minutes until the sauce thickens and coats the chicken completely.

  5. 5

While the chicken rests, toss the sliced peaches, shredded cabbage, lime juice, and cilantro in a medium bowl to make the slaw.

  6. 6

Serve the warm chicken thighs with a generous portion of the fresh peach slaw on the side.

๐Ÿ’ก Tips

Store any leftover chicken and slaw in separate airtight containers in the fridge for up to two days. If you prefer a milder dish, use only one chipotle pepper instead of two. This pairs wonderfully with a side of steamed rice or quinoa.
