There is nothing better than a quick noodle stir fry when you want something satisfying for dinner. I love using dried rice noodles because they stay fresh in the pantry for months and soak up all the delicious sauce while they cook.

The real secret to this recipe is the beef. By tossing your sliced steak with a tiny bit of baking soda, you get that famous Chinese restaurant texture where the meat stays perfectly soft and juicy. It makes such a difference, and it ensures your beef never gets tough even if the noodles take a few extra minutes in the pan.

Ingredients

  • 250g rump steak, thinly sliced
  • 1/2 teaspoon baking soda
  • 200g dried rice noodles
  • 2 tablespoons vegetable oil
  • 1/2 brown onion, sliced
  • 3 cloves garlic, minced
  • 2 bunches bok choy or choy sum, cut into 5cm pieces
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper

    Place your sliced beef in a bowl and toss it with the baking soda. Let it sit for 15 minutes while you prepare the other ingredients.

    Soak the rice noodles in hot water according to the package instructions until they are tender but firm, then drain well.

    Whisk the oyster sauce, light soy, dark soy, sugar, and white pepper together in a small bowl to make your sauce.

    Heat one tablespoon of oil in a large wok or skillet over high heat. Add the beef and stir fry for about 2 minutes until browned, then remove it from the pan.
