There is nothing quite like a big bowl of noodles for a quick weeknight dinner. This recipe is a favorite in my house because it comes together in just twenty minutes, making it perfect for those busy evenings when you want something satisfying but do not have hours to spend in the kitchen.

You can easily customize this by swapping the veggies for whatever you have in your crisper drawer. My best tip is to whisk the peanut sauce ingredients in a separate small bowl first to make sure it is perfectly smooth before you toss it with the noodles.

Ingredients

  • 8 ounces linguine or rice noodles
  • 1 pound chicken breast, thinly sliced
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup creamy peanut butter
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 2 tablespoons warm water
  • Crushed peanuts and chopped cilantro for garnish
