Perfect Pan Seared Steak at Home
You can easily make a restaurant quality steak in your own kitchen with just a heavy skillet and a little patience.
There is something so special about sitting down to a perfectly cooked steak. While it feels like a fancy occasion dish, you do not need to be a professional chef to get that beautiful crust and juicy center at home. It is all about starting with a dry surface and letting the pan get nice and hot before you add the meat.
My favorite tip is to always let your steak come up to room temperature before it hits the pan. This ensures that it cooks evenly from edge to center instead of being cold in the middle. Once you try this method, you will never feel the need to pay high prices at a steakhouse again.
Ingredients
- 2 thick cut steaks like ribeye or strip
- 1 tablespoon high smoke point oil like avocado or grapeseed
- 2 tablespoons unsalted butter
- 2 cloves garlic smashed
- 2 sprigs fresh thyme or rosemary
- Kosher salt to taste
- Black pepper to taste

Take your steaks out of the fridge about thirty minutes before cooking to bring them to room temperature.

Pat the steaks very dry on all sides using paper towels so they sear properly.

Season the steaks generously with salt and pepper on both sides just before cooking.

Heat your skillet over medium high heat until it is hot, then add the oil.

Place the steaks in the pan and let them cook without moving them for about four minutes to develop a deep brown crust.

Flip the steaks and add the butter, garlic, and herbs to the pan.

Baste the steaks by spooning the melted herb butter over them for another three to four minutes until they reach your desired doneness.

Remove the steaks from the pan and let them rest on a plate for at least five minutes before slicing.

Use a meat thermometer to check your progress so you never overcook a good cut of meat. Let the steaks rest for at least five minutes to keep the juices inside. Store any leftovers in an airtight container in the fridge for up to two days and slice them thin for a quick salad topper.
