Quiche is one of my favorite egg dishes to enjoy because it works for breakfast, lunch, or even a light dinner. It is usually served with fresh fruit for brunch or a simple side salad when I want something quick for a weeknight meal.

I really love this crustless version because it saves so much time. By skipping the pastry crust, you get a light and fluffy bake without any of the fuss of rolling out dough or pre baking, so it is ready for the oven in just a few minutes.

Ingredients

  • 4 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped ham or cooked bacon
  • 1/4 cup chopped green onions
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

    Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9 inch pie dish.

    In a large bowl, whisk together the eggs, milk, flour, baking powder, salt, and pepper until the mixture is smooth.

    Stir in the shredded cheese, chopped meat, and green onions.

    Pour the egg mixture into your prepared pie dish, spreading the ingredients out evenly.

    Bake for 35 to 40 minutes or until the center is set and the top is lightly golden brown.

    Let the quiche rest for 5 minutes before slicing and serving.

💡 Tips

Store any leftovers in an airtight container in the fridge for up to three days. You can easily reheat a slice in the microwave for a quick morning meal. Feel free to swap the ham for spinach or mushrooms if you want a vegetarian version.
