Even when the garden is not producing as much as we hope, a few pieces of zucchini can still make a wonderful side dish. This simple sauté brings out the best in the vegetable without a lot of fuss or extra ingredients.

It is the perfect side for a busy weeknight when you want something light and healthy on the table fast. I like to keep the seasoning basic so the natural sweetness of the zucchini really shines through.

Ingredients

  • 2 medium zucchini, sliced into half moons
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

    Heat the olive oil in a large skillet over medium heat.

    Add the sliced zucchini to the pan in a single layer if possible.

    Cook the zucchini for about 5 to 7 minutes, stirring occasionally, until it starts to brown slightly.

💡 Tips

Serve this warm alongside grilled chicken or fish. If you have leftovers, keep them in an airtight container in the fridge for up to two days and reheat them gently in a pan.
