This tomato tart is one of my favorite ways to celebrate the season when garden tomatoes are at their best. The combination of the tangy feta cheese and the buttery almond flour crust creates a wonderful flavor that feels light yet satisfying for any meal.

Because the crust is made with almond flour, it holds up beautifully and adds a lovely nutty quality to the dish. I find it tastes best when the tomatoes are picked right off the vine, but any ripe variety from your local store will work just fine here.

Ingredients

  • 2 cups almond flour
  • 1/4 cup butter, melted
  • 1 large egg
  • 1/2 teaspoon salt
  • 1 cup feta cheese, crumbled
  • 1/2 cup Greek yogurt
  • 2 large tomatoes, thinly sliced
  • 1 tablespoon fresh basil, chopped
  • 1/4 teaspoon black pepper

Instructions

    Preheat your oven to 350 degrees Fahrenheit.

    In a mixing bowl, stir together the almond flour, melted butter, egg, and salt until a dough forms.

    Press the dough firmly into the bottom and up the sides of a tart pan.

    Bake the crust for about 10 minutes until it looks lightly golden, then remove it from the oven to cool for a few minutes.

    In a small bowl, whisk the feta cheese and Greek yogurt until smooth, then spread this mixture evenly over the bottom of the crust.

    Arrange the tomato slices on top of the feta layer and sprinkle with black pepper.

    Bake for another 20 minutes until the tomatoes are tender and the crust is set.

    Garnish with fresh basil before serving.

💡 Tips

This tart is best served warm or at room temperature. If you have leftovers, keep them in the fridge for up to two days and reheat them in the oven to keep the crust crisp.
