Grilled mini sweet peppers are a staple in my kitchen whenever the grill is fired up. They are incredibly bright, naturally sweet, and become so tender and smoky once they hit the hot grates. It is one of those side dishes that feels fancy but takes almost no effort at all.

I love keeping these simple with just a little olive oil and salt, but feel free to add a pinch of smoked paprika or garlic powder if you want extra flavor. They disappear fast, so I recommend making a big batch to share with friends and family.

Ingredients

  • 1 pound mini sweet peppers
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

    Preheat your grill to medium high heat.

    Wash the peppers and pat them dry with a paper towel.

    Place the peppers in a large bowl and drizzle with the olive oil, tossing well to coat them evenly.

    Sprinkle the salt and black pepper over the peppers and toss again.

    Place the peppers directly onto the grill grates.

These are best served immediately while warm, but any leftovers store well in an airtight container in the fridge for up to three days. You can reheat them quickly in a pan or eat them cold tossed into a fresh salad. They also pair wonderfully with a side of creamy herb dipping sauce.
