This mushroom frittata is one of my favorite things to make when I want something nutritious but feel like treating myself. It has a lovely texture and feels quite special even though it is very simple to pull together.

Because we are using egg whites, the result is much lighter than a traditional omelet. My best tip is to use a good nonstick skillet so the frittata slides out easily onto your plate without any fuss.

Ingredients

  • 2 cups egg whites
  • 8 ounces sliced mushrooms
  • 2 shallots, finely diced
  • 1/2 cup shredded cheese of your choice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

    Preheat your oven broiler to high.

    Heat the olive oil in an oven safe skillet over medium heat.

    Add the mushrooms and shallots to the skillet and sauté until they are soft and golden brown.

    Pour the egg whites over the mushroom mixture and let them cook undisturbed for about five minutes until the edges begin to set.

    Sprinkle the shredded cheese over the top of the eggs.

    Place the skillet under the broiler for two to three minutes until the top is set and the cheese is melted and bubbling.

    Remove carefully from the oven, slice into wedges, and serve warm.

💡 Tips

You can keep leftovers in an airtight container in the fridge for up to two days. This dish tastes great cold or quickly reheated in the microwave. Feel free to swap the cheese for goat cheese or feta for extra flavor.
