When you have a new kitchen, the last thing you want to do is spend all your time scrubbing pots and pans. This roasted chicken and vegetable recipe is my go to for busy nights when I want something wholesome and comforting that tastes like a home cooked meal.

I love how the vegetables soak up all the delicious juices from the chicken as they roast. It is a very forgiving recipe, so feel free to swap in whatever seasonal veggies you have on hand in your fridge.

Ingredients

  • 4 chicken thighs with skin on
  • 1 pound baby potatoes, halved
  • 2 large carrots, chopped into chunks
  • 1 head of broccoli, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 fresh lemon, sliced

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Place the chicken thighs, potatoes, and carrots onto a large rimmed baking sheet.

    Drizzle the olive oil over everything and sprinkle with oregano, garlic powder, salt, and pepper.

    Toss the ingredients with your hands until everything is well coated, then spread them out into a single layer.

    Roast in the oven for 20 minutes.

    Remove the pan from the oven, add the broccoli florets and lemon slices, and give everything a quick toss.

    Return the pan to the oven and roast for another 15 to 20 minutes until the chicken is golden brown and the vegetables are tender.

Leftovers store beautifully in airtight containers in the fridge for up to three days. You can reheat them in the oven to keep the skin crispy. If you want a little extra flavor, serve this with a dollop of tzatziki or a squeeze of fresh lemon juice right before eating.
