When the school year starts, I always look for meals that I can set and forget. This chicken chili is a favorite in our house because it tastes wonderful after simmering all day and it makes enough to feed a hungry family easily.

You can prep the ingredients in the morning, turn on the slow cooker, and come home to a house that smells amazing. It is a hearty dish that even the picky eaters will enjoy with a bit of cheese on top.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can diced tomatoes
  • 1 cup frozen corn
  • 1 small onion, diced
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste

Instructions

    Place the chicken breasts at the bottom of your slow cooker.

    Add the black beans, kidney beans, diced tomatoes, corn, and onion on top of the chicken.

    Pour the chicken broth over the ingredients and sprinkle with chili powder, cumin, salt, and pepper.

    Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.

    Remove the chicken breasts, shred them with two forks, and stir the meat back into the chili before serving.

Serve this chili with a side of shredded cheddar cheese, a dollop of sour cream, or some crushed tortilla chips. If you have leftovers, keep them in an airtight container in the fridge for up to three days or freeze them for a quick meal later.
