Creamy Pumpkin Marry Me Chicken
This cozy one pan dinner features tender chicken in a velvety pumpkin and parmesan sauce with sun dried tomatoes.
dailyrecipesbook.comEveryone loves the classic Marry Me Chicken for its rich sauce, but adding pumpkin makes it the ultimate comfort food for a chilly evening. The sauce is thick and savory with a wonderful hint of sweetness from the pumpkin that pairs perfectly with the salty parmesan and tangy sun dried tomatoes.
Since this is a one pan meal, you will have very little cleanup to worry about after dinner is done. I love to use fresh sage here because it brings out those earthy autumn flavors, but you can always use dried herbs if that is what you have in your pantry.
Ingredients
- 1.5 pounds chicken breast cutlets
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup pumpkin puree, not pie filling
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1/3 cup sun dried tomatoes, chopped
- 1 teaspoon fresh sage, finely chopped
- 1/2 teaspoon dried oregano
Instructions
- 1
Season your chicken cutlets on both sides with a good pinch of salt and pepper.
- 2
Heat the olive oil in a large skillet over medium high heat until it is shimmering.
- 3
Add the chicken to the pan and cook for about 5 minutes per side until it is golden brown and cooked through. Remove the chicken from the pan and set it aside on a plate.
- 4
In the same skillet, turn the heat down to medium and add the minced garlic. Stir it for about one minute until it smells fragrant.
- 5
Pour in the chicken broth, pumpkin puree, heavy cream, and parmesan cheese. Whisk everything together until the sauce is smooth.
- 6
Stir in the sun dried tomatoes, fresh sage, and oregano.
- 7
Let the sauce simmer gently for about 3 to 5 minutes until it begins to thicken slightly.
- 8
Slide the chicken back into the pan and spoon that beautiful sauce all over the top.
- 9
Serve warm over your favorite pasta or with a side of crusty bread.
๐ก Tips
Store any leftovers in a sealed container in the refrigerator for up to three days. If the sauce gets too thick when you reheat it, just add a tiny splash of chicken broth or water to thin it back out.
