There is nothing quite like a big bowl of savory beef and creamy curry broth after a long day. It feels like a hug in a bowl and is one of my favorite ways to turn simple ingredients into a special dinner.

My top tip for this recipe is to make sure you let the beef get nice and crispy in the pan before adding it to the bowls. That texture contrast against the silky coconut broth is exactly what makes this meal so satisfying.

Ingredients

  • 1 pound ground beef
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon garlic powder
  • 1 tablespoon vegetable oil
  • 1 can full fat coconut milk
  • 2 tablespoons red curry paste
  • 1 cup beef broth
  • 1 tablespoon fish sauce
  • 2 cups cooked white rice
  • 1 cup fresh cilantro
  • 1 lime, cut into wedges

Instructions

    In a small bowl, mix the ground beef with the soy sauce, brown sugar, and garlic powder.

    Heat the vegetable oil in a large skillet over medium high heat.

    Add the beef to the skillet and cook it until it is well browned and slightly crispy, then remove it from the pan and set aside.

    In the same skillet, whisk together the coconut milk, red curry paste, beef broth, and fish sauce.

    Simmer the broth mixture for about five minutes until it thickens slightly and becomes fragrant.

Store any leftover broth and beef in a separate airtight container from the rice to keep the rice from getting mushy. If the broth thickens too much in the fridge, just add a splash of water when you reheat it on the stove.
