Summer Roasted Tomato Toast
A simple and cozy way to enjoy fresh summer tomatoes on crusty toasted bread.
There is something truly special about fresh tomatoes in the middle of summer. While I usually love them sliced thin with just a pinch of salt, this oven roasted version is my new favorite for busy workdays when I want a warm meal without too much fuss.
This toast is wonderful because it brings out a deep sweetness in the fruit that you just cannot get when eating them raw. My best tip is to use the best quality crusty bread you can find at your local bakery to soak up all those lovely juices.
Ingredients
- 2 large ripe tomatoes, sliced into thick rounds
- 2 slices of sourdough or crusty bread
- 2 tablespoons olive oil
- 1 clove garlic, peeled and halved
- 1/2 teaspoon flaky sea salt
- 1/4 teaspoon freshly cracked black pepper
- Fresh basil leaves for garnish

Preheat your oven to 400 degrees Fahrenheit.

Place the tomato slices on a parchment lined baking sheet.

Drizzle the tomatoes with one tablespoon of olive oil and sprinkle with half of the salt and pepper.

Roast the tomatoes for 15 to 20 minutes until they are soft and slightly caramelized.

While the tomatoes roast, toast your bread slices until they are golden brown.

Rub the cut side of the garlic clove over the warm toast to add a hint of flavor.

Arrange the roasted tomato slices on the toast and drizzle with the remaining olive oil.

Top with fresh basil and the rest of the salt and pepper before serving immediately.

Serve this toast with a side of mixed greens for a balanced lunch. If you have leftovers, keep the roasted tomatoes in a sealed container in the fridge for up to two days and toast fresh bread when you are ready to eat again.
