My family tends to rotate between wanting wholesome, vibrant meals and craving all the fun summer treats like ice cream and fried chicken. When we have had a bit too much of the indulgent stuff, this teriyaki chicken is my go to recipe to get us back on track. It feels light and fresh, but it is still deeply satisfying and packed with bold flavors.

I love serving this for a relaxed family dinner, but it also works beautifully when hosting extended family. You can grill the chicken outside or simply sear it in a pan. My top tip is to let the peaches sit for a few minutes before serving, as they will release their natural juices and make the whole dish taste even better.

Ingredients

  • 1/2 cup teriyaki sauce
  • 1 large clove garlic, grated
  • 1 pound chicken breasts
  • 2 teaspoons avocado oil
  • 4 peaches or nectarines, diced
  • 1/4 cup chopped scallions or cilantro
  • 1 teaspoon freshly grated ginger
  • 1 to 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 1/2 tablespoons brown sugar
  • 1 teaspoon chili crisp
  • 1 to 2 tablespoons water
  • 1 cup white rice

    Slice the chicken breasts into thinner pieces or pound them until they are even in thickness.

    Marinate the chicken in the teriyaki sauce and grated garlic for at least 15 minutes or up to 12 hours.

    Cook the rice according to the package instructions.

    Whisk the sesame drench ingredients together in a small bowl and set aside.

    In a separate bowl, toss the diced peaches with scallions, ginger, salt, and sugar. Let this mixture sit so the juices develop.

    Heat the avocado oil in a large skillet over medium heat.

    Remove the chicken from the marinade, letting the excess drip off, then cook in the skillet for 3 to 4 minutes per side until fully cooked through.
