This balsamic pork loin is one of my favorite go to meals when I need something that tastes like it took all day to cook but is actually ready in under an hour. The pork comes out incredibly moist, and the tangy garlic balsamic glaze is just delicious spooned over the meat and a side of mashed potatoes.

Because pork is such an affordable and versatile meat, it really picks up all the spices and liquids you cook it with. This recipe uses a mix of fresh garlic, brown sugar, and smoked paprika to create that perfect balance of sweet and savory that everyone in my family loves.

Ingredients

  • 2 to 3 pound pork loin
  • 6 whole garlic cloves
  • 1 tablespoon canola oil
  • 1 tablespoon minced garlic
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup low sodium chicken broth
  • 1/2 cup balsamic vinegar
  • 2 tablespoons balsamic reduction
  • 1 tablespoon low sodium soy sauce
  • 1/2 teaspoon liquid smoke
  • 1 tablespoon olive oil
  • 2 tablespoons cornstarch mixed with 4 tablespoons cold water

Instructions

    Pat the pork loin dry with paper towels. Make six small slits in the meat and push a whole garlic clove into each one.

    Combine the minced garlic, onion powder, garlic powder, brown sugar, paprika, cayenne, Italian seasoning, salt, and pepper in a small bowl. Rub this mixture all over the pork loin.

    Set your Instant Pot to the Sauté function and add the canola oil. Once the oil is hot, sear the pork loin on all sides until it is nicely browned.

    In a separate bowl, whisk together the chicken broth, balsamic vinegar, balsamic reduction, soy sauce, liquid smoke, and olive oil.

    Pour the sauce mixture into the pot, making sure to scrape up any browned bits from the bottom with a wooden spoon.

    Turn off the Sauté function, secure the lid, and set the valve to sealing. Cook on high pressure for 15 minutes.

    Allow the pressure to release naturally for 15 minutes before opening the lid. Ensure the internal temperature of the pork has reached 140 degrees.

    Remove the pork to a cutting board and cover it with foil to rest.

    Turn the Instant Pot back to Sauté and stir in the cornstarch slurry. Let the sauce simmer until it thickens into a nice gravy.

    Slice the pork and serve it with the warm balsamic gravy.

💡 Tips

To store leftovers, keep the sliced pork in an airtight container with plenty of extra gravy to keep it moist for up to three days. When serving, this dish goes wonderfully with creamy mashed potatoes or roasted green beans to soak up all that extra balsamic sauce.
